Buy the haggis the US market can sell
Traditional Scottish haggis can contain sheep's heart, liver and lungs with oatmeal, onion, suet and spices. Animal lungs have been treated as unfit for human food in the United States since 1971. Order a lung-free haggis or vegetarian version from a butcher or mail-order seller. Confirm the cooked weight, serving count and cooking instructions before ordering.
Allow one six-ounce cooked portion of haggis per person, then check the package's cooked yield. Twelve people need 72 ounces, or 4 1/2 pounds. Twenty need 120 ounces, or 7 1/2 pounds. Thirty need 180 ounces, or 11 1/4 pounds. If each package truly yields six portions of that size, order two, four or five. Otherwise buy by cooked weight. If half your guests choose vegetarian haggis, split the count and use separate utensils and labels.

Put names beside the speeches
A Burns supper opens with a welcome, then guests sit and the Selkirk Grace is said. Soup follows. The haggis enters on a platter, with a piper at formal gatherings or Scottish music at an informal home meal. Guests stand for its arrival. The reader cuts into the haggis at the stanza about the knife in Burns's Address to a Haggis. Mark that stanza on the reader's copy. Serve haggis, neeps and tatties, then dessert and coffee.
The Immortal Memory is a speech about Burns followed by a toast. An Address to the Lassies and a reply follow. Choose a speaker for each and ask them to keep the remarks kind. Give the haggis reader a copy of the Scots words and give a backup reader the same text. Finish with poems or songs, thanks, and everyone joining hands for Auld Lang Syne.

Neeps, tatties and a soup pot
Neeps are mashed turnip or swede, and tatties are potatoes. Put them in separate serving bowls so guests can choose their portions. For this meal allow 1/2 cup of each per guest: 6 cups of neeps and 6 of tatties for 12, 10 cups of each for 20, 15 cups of each for 30. A potato recipe yielding five cooked cups needs two, two or three batches respectively. A six-cup neeps recipe needs one, two or three. Check the pot capacity before combining three batches.
Soup can be a small first course. For six ounces per guest, 12 people need 72 fl oz, 20 need 120, and 30 need 180. A 48-ounce pot covers eight first-course bowls. Make two, three or four such pots. Four pots give 192 ounces, leaving 12 after 30 six-ounce bowls. Scotch broth, potato soup, cullen skink and cock-a-leekie appear in supper menus, but choose one recipe and label its ingredients. The soup doesn't need to compete with the haggis for the same burner at 6:30.
| Supper count | 12 guests | 20 guests | 30 guests |
|---|---|---|---|
| Haggis at 6 oz each | 72 oz | 120 oz | 180 oz |
| Packages yielding six 6 oz portions | 2 | 4 | 5 |
| Neeps at 1/2 cup each | 6 cups | 10 cups | 15 cups |
| Tatties at 1/2 cup each | 6 cups | 10 cups | 15 cups |
| Soup at 6 fl oz each | 72 fl oz | 120 fl oz | 180 fl oz |
| 48 fl oz soup pots | 2 | 3 | 4 |

Keep the haggis hot according to its package and hold other hot dishes at 140 F or above if they wait. Give each dish a serving spoon. Clear a path and a stable landing place for the hot haggis platter.
A toast can have an alcohol-free glass
Scotch whisky is often used for Burns Night toasts, and a non-alcoholic drink works too. If you pour spirits, 1.5 fl oz of 80-proof whisky counts as one US standard drink. For 12 guests taking one measured toast, that is 18 fl oz; for 20, 30 fl oz; for 30, 45 fl oz. A 750 ml bottle holds about 25.4 fl oz, so one bottle covers 12 single pours, two cover 20 or 30. Offer an equally easy alcohol-free option and keep drivers' glasses alcohol-free.
Ask guests to plan a sober driver who won't drink or use drugs, or arrange a ride. A guest whose ride changes can wait indoors while another is arranged. Keep water beside the toast glasses and pickup details in the invitation.

Count back from the address, not the doorbell
| When | Job |
|---|---|
| Five weeks out [December 21, 2026] | Invite guests, order a lung-free or vegetarian haggis, and name the speakers. |
| Two weeks out [January 11, 2027] | Choose soup and side recipes and read the haggis package timing. |
| One week out [January 18, 2027] | Close replies, adjust the haggis order and give speakers their parts. |
| The night before [January 24, 2027] | Set plates and safe unlit candles. Clear the haggis route. |
| Supper day [January 25, 2027] | For a 7:00 haggis address, start two 45-minute oven rounds at 4:00 and finish by 5:30. Hold safely until serving. |
If three haggis packages fit the oven and each round takes 45 minutes, two packages for 12 need one round; four for 20 and five for 30 need two. Start the 30-person plan at 4:00 and finish at 5:30, then hold the haggis hot until the 7:00 address. If each round takes 60 minutes, start at 3:30. At 6:00 guests arrive, at 6:20 welcome and grace, at 6:30 soup, at 7:00 haggis, and at 8:00 coffee and speeches. A 9:15 song leaves time for coats and rides.
If you light candles, place them at least 12 inches from cloth and paper, at least 3 inches apart, in sturdy holders. Name an adult to watch them and snuff them before the room empties. Battery candles work when real flames cannot be kept clear.
First, order a lung-free or vegetarian haggis and confirm the package's cooked yield.
